Somewhere amid the chaos of brewers trying to out-thiolize one another with ingredients like Phantasm and processes like mash hopping, Omega Yeast got way too good at getting yeasts to produce free thiols – which smell like tropical fruit in low concentrations but resemble brimstone at higher levels. It’s time to reign in the sulfur, and we’re happy to lead the charge with this tasteful experiment. Noble Cascade was fermented with a blend of 7% Lunar Crush – a thiolized lager yeast – and 93% Mexican lager yeast, which adds subtle fruity overtones to this easy-drinking summer lager.
